How to Cook: Horiatiki Salad (Greece)

Horiatiki salad is a traditional Greek salad with tomatoes, cucumbers and olives. Horiatiki means” like in the countryside” and this fresh and healthy salad is found under one form or another throughout the eastern Mediterranean region.

This salad is known under the name of “fattoush” in Arab countries. Turks serve “ezme salatasi”, which is a much finer cut version.


3-4 tomatoes cleaned of seeds and chopped

1 cucumber peeled and chopped

1 red onion thinly cut

A half cup of kalamata olives

A half cup of feta cheese, cut into cubes or grated

A half cup of olive oil

A quarter cup of red wine vinegar

1-2 cloves of garlic finely chopped

1 teaspoon of oregano

Salt and pepper to taste

Method of preparation

Mix the vegetables, olives and cheese in a large bowl

In other bowl, mix olive oil, vinegar, garlic, oregano, salt and pepper.

Put the dressing over the vegetables and mix, let it marinate for 30 minutes and serve cold or at room temperature.
